Sunday Treats...

Peanut Butter French Toast


In a medium bowl, stir together the following ingredients until well blended:
1 1/2 cups milk
1 cup pancake baking mix (like Bisquick)
3/4 cup peanut butter (can use 1 cup if preferred)
2 tablespoons granulated sugar
1 teaspoon vanilla
1 egg
Carefully dip slices of bread into batter on both sides, and place on greased hot griddle, in sandwich maker, or in waffle iron. Serve with syrup, mini chocolate chips, powdered sugar... or all three!

(Our batter batch this morning was enough to coat 12 slices of Texas toast.)



While on the subject of sweets, aren't these little oatmeal apple pies (with bits of cranberries) just the cutest?

They'll be added to Casey's breakfast collection at school, where we keep a Ziplock in the freezer of homemade treats (French toast, banana pancakes, soda bread, zucchini bread, and now these) for her to enjoy each morning.

And a last little sweet bit - I thought I was buying donuts... but the packaging proved me wrong.
